- Half bunch Collard greens finely shredded or chopped
- 1 cup Quinoa
- 1/4 cup feta cheese
- Handful of cashews
- Sweet potatoes
- White wine Vinaigrette
For Sweet Potatoes:
- 1 tbsp olive oil
- 1 tsp cumin
- 1 tsp thyme
- Salt and pepper to taste
Roast in oven for 35 minutes at 350
For dressing:White Wine Vinaigrette:
- 1/2 cup olive oil
- 1/4 cup rice wine vinegar
- 2 tbsp lime juice
- 1 tsp minced garlic
- Salt and Pepper to taste
