These are probably my new way to have potatoes. You can enjoy it cold or hot. Remember cooked then cooked potatoes have a higher amount of resistant starch. This beneficial prebiotic fiber helps nourish the healthy bacteria in our gut!

Ingredients :
4-5 yellow potatoes
3/4 cup green onions
1/2 cup chopped parsley
1/2 cup chopped cilantro
1/4 cup Greek yogurt
2 minced garlic cloves
1 tsp curry powder
1/4 tsp cumin
Juice from half a Lemon juice
TT Salt & Pepper

Directions:
Clean and rinse yellow potatoes. Boil for 20-25 minutes. Once cooked, drain water and allow potatoes to cool down enough for handling. Dice potatoes to your desired size. Drizzle potatoes with olive oil, then coat with curry powder and cumin. Next, add chopped parsley, cilantro, green onions, and garlic. Lastly, flavor potatoes with lemon juice and coat with Greek yogurt. Add more Greek yogurt if desire a creamier texture. Add salt and pepper to desired taste.
