I think I’m a huge fan of Indian food because it utilizes my favorite seasoning often – CUMIN!.

Seasonings are often underrated when it comes to their nutritional benefits. Did you know cumin is a rich source of iron – Providing almost 20% of your daily iron in one tsp!  Take notes women of color, we are more likely to have an iron deficiency, so cooking with cumin can easily boost your iron intake.  

Indian Inspired Flat Bread

  • 1 Cup Plain Greek Yogurt
  • 1 tbsp lemon juice
  • 2 tsp ground cumin
  • 2 tsp red pepper flakes
  • 1 tsp black pepper
  • 1 tsp salt
  • 2-3 boneless chicken breast

Mix all ingredients together. Marinate boneless chicken in mixture. Place in Ziploc bag in fridge overnight. In the morning place in crockpot along with sauce recipe below.

Sauce:

  • 2 tbsp oil (I used avocado oil)
  • 2 tbsp minced garlic (or more, it’s garlic 😉)
  • 2-3 tbsp of diced jalapenos
  • 3 tsp ground cumin
  • 2 tsp paprika
  • 1 8oz can tomato sauce
  • ½ cup half and half
  • ¾ cup milk

Mix all ingredients together and pour over marinated chicken in crockpot. Cook on high for 4-5 hrs. I

Composing Flatbread: Drizzle flatbread with minced garlic and olive oil. Top with cooked chicken and diced red onions. Toast in preheated oven until desired brownness. Top with fresh cilantro. �
