• Half bunch Collard greens finely shredded or chopped
  • 1 cup Quinoa
  • 1/4 cup feta cheese
  • Handful of cashews
  • Sweet potatoes
  • White wine Vinaigrette

For Sweet Potatoes:

  • 1 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp thyme
  • Salt and pepper to taste

Roast in oven for 35 minutes at 350
For dressing:White Wine Vinaigrette:

  • 1/2 cup olive oil
  • 1/4 cup rice wine vinegar
  • 2 tbsp lime juice 
  • 1 tsp minced garlic
  • Salt and Pepper to taste
